Can it be used to rehydrate meals with adding boiling water? what size would be appropriate?

Most freeze dried meals make over 500g, so would recommend a bigger bowl.
Also, the freeze dried meals are designed to be able to be made in the packaging, so wouldn't need to mix in the bowl.
